Wallet
Apple Pay is a wallet, not a processor. It runs on top of your payment processor or ecommerce platform, and card fees come from that processor. Apple lists Shopify, WooCommerce and many PSPs as supporting it.

Apple's developer pages do not list a merchant fee. Shopify says merchants pay no extra fee for Apple Pay beyond their payment provider's normal processing fees, and BlueSnap's US schedule includes wallets at no added cost above card rates.
Underwriting, restricted businesses and reserves are set by your processor, not Apple.
Payout timing is set by your processor.
Shopify supports Apple Pay through Shopify Payments and third-party providers that offer it. Apple's payment platforms list includes Shopify, WooCommerce, Stripe, Adyen, Braintree, Square, Paysafe and BlueSnap.
